Who is behind Maison LEGRIS?

Founded in 1986 by Emmanuel Legris, passionate oyster farmer, Maison Legris is a family-run business based in Lilia in North Finistère. Today it is run by a passionate team, led by a know-how forged by precision and love of the trade. The team now perpetuates a demanding vision for oyster farming combining tradition, innovation and local commitment.

What makes LEGRIS oysters so special?

Our oysters grow in the Lilia archipelago, in the heart of the Saint Cava bay. This zone naturally benefits from the Atlantic swell bringing an exceptional quality and a remarkable vitality to the water. Every day the oysters spend several hours out of the water, which leads to a firmer flesh, a finer taste and an optimal resistance out of the water. We have chosen quality down to the finer details: each oyster bag is naturally cleaned by our own periwinkles.

How do you guarantee the quality of your products?

We control the totality of the production cycle. Emmanuel Legris since 1986, joined by Christophe Trebaol and his eldest son Adrien Legris have put their marine biology expertise to work by adjusting all aspects of production: farming density, choice of seed, handling schedule. Each batch is traced from beginning to end and purified in our independent tanks. We regularly forego sanitary controls and apply strict procedures until oysters are in their hampers ready to be shipped.

Do you produce other shellfish?

We also produce periwinkles that naturally keep our oyster bags clean by eating the algae developing on them. We do not farm flat oysters but we seasonally offer some in limited quantities, and they do spend some time on our oyster beds.

What’s the difference between triploid or diploid oysters?

Our oysters are mostly triploid. These types of oysters are obtained naturally in hatcheries and do not reproduce, which allow them to keep a constant quality throughout the year. They have a fleshier aspect and are not milky in the summer. We have chosen this type of oyster to guarantee regularity and optimal taste, all the while respecting the natural balance of the environment.

Do you organise events or partnerships?

Yes, we participate in various events every year (Festival du Bout du Monde, Petites Folies, Salon de la Penfeld…) and proudly sponsor local initiatives. We are always open to associative or professional partnerships: tell us about your project via our online form.

Can we walk along your oyster beds?

Our oyster beds are not private. At low tide, it is possible to walk along them and observe our teams in action. The Lilia archipelago offers an exceptional natural environment for a salty stroll (please be aware of the tide coming back up!)

Orders & deliveries

Where do you deliver?

We deliver all over metropolitan France and Corsica directly from our shipping site in Lilia.

How are LEGRIS oysters transported?

We use a cold shipping service with Chronopost Food. Every hamper is prepared to demand, directly from our tanks after the required purification period, and prepared with care by our teams. We specifically select packaging and products with high standards, just like in a fine food shop.

Can I choose a specific delivery date?

Yes, different dates are offered depending on your address. You can also order on our Pourdebon page, our trusting shipping partner that exclusively works with French producers and guarantees the quality of shipment.

Can I book in advance (Christmas, events, etc.) ?

Absolutely. Just choose a date when you order or contact us via the online form if you cannot see the date you want.

Do you offer subscriptions?

Not yet, but if you are interested in a regular shipment, let us know via our order form!

How do I cancel my order?

For orders made on Pourdebon, please see their cancellation policy. For orders placed on our website, contact us via our online form to find a solution.

What happens during delivery?

Delivery is done in person. It is essential to be present on the day. A link is sent on the day of shipping to follow the order.

What to do if my package is damaged?

Refuse reception if it is damaged. If this is not possible, take photos of the package and contact us as soon as possible with your order number.

What if products are not satisfactory ?

Keep the packaging and the product and let us know as soon as possible. We will find an appropriate solution.

Conservation and tasting advice

How long can LEGRIS oysters keep for?

Our oysters can keep for 7 days after the packaging date specified on the tag. They are robust and handle transport well. They can even travel in a well closed bag. Many customers come to Lilia and travel back home across France without any problems.

Should I refrigerate them immediately?

Yes, ideally at the bottom of the fridge. In the winter, a cold garage (about 10°C) is also fine. Beware of negative temperatures which can alter the quality of the oysters.

Can they be frozen?

No. Freezing them destroys their texture and taste.

How to serve LEGRIS oysters?

Serve them just after opening them, lying flat ideally on ice or sea salt.

Lemon, shallot and vinegar sauce or other subtle condiments can go well with them. The lid of our hampers can of course be a decorative addition to your dinner table and show off the origin of the oysters.

How to eat LEGRIS oysters?

The purest way will always be as is. At our bar, our grilled oysters recipe has also had great success. They can also be poached, served with seaweed or aromatic butters. As for pairing wines, we recommend a white Montravel Bordeaux or a Pouilly-Fuissé from the Saumaize-Michelin winemakers. Both of these references can be found at the oyster bar.

Are your hampers recyclable?

Yes. Our hampers are made of wood, certified by current norms and 100% recyclable. Many of our customers give them a second life: storage, decoration and other uses…

We change the design of the lids according to the seasons: some like to collect them! Don’t hesitate to share your ideas or creations, we always enjoy seeing them.

Oyster bar, markets and direct sale

Where can I try LEGRIS oysters?

At the Maison LEGRIS oyster bar, facing the sea. This is a complete experience, convivial and rooted in our universe.

Can I book a table?

Yes, directly via our website by clicking on “Book a table”. You will receive a confirmation by email once the team has processed your request.

Is the oyster bar open all year?

Yes, with opening times adapted to each season. In the summer, it is open every day from 10am to 10pm. The rest of the year: please refer to the oyster bar website page or Google Maps.

Can I buy LEGRIS oysters elsewhere than at the oyster bar?

Yes, we are on the St Renan (Saturdays) and St Louis (Sundays) markets all year between 8am and 12pm. We also deliver oysters at fishmongers and restaurants everywhere in Brittany and France, including some Michelin-starred restaurants. You can also find our products abroad. Please contact us to know the closest selling point to you.

Do you do guided visits?

Yes, we have partnered with our local tourism office to offer free guided visits during the summer (see their website). For specific queries, please use our contact form.

Glossary of Maison Legris

Here are some words that are part of the daily life of an oyster farmer, stemming from tradition, the sea and thoroughness.

Seed

The starting point. The “baby oyster”, collected at sea or grown in hatcheries, that we farm for several years before reaching maturity.

Oyster beds

Our oysters grow in the open sea, in zones called “beds”, visible at low tide in the Lilia archipelago. These are our marine fields.

Oyster bag

A rigid mesh bag where oysters live, protected but stirred by the currents. Each bag is thoroughly cleaned by our very own periwinkles.

Purification

A mandatory step to guarantee the safety of our consumers. Our oysters spend a pre-defined time in our tanks in Lilia in filtered and monitored water to obtain flawless hygiene standards.

Triploid

Our oysters are triploid, a very conscious choice. This means they will not reproduce during the summer, keeping a constant flesh and never milky all year round.

Wood hamper

The traditional wood packaging in which our oysters are shipped. We have selected a quality package with our provider which is essential for keeping the oysters tightly and safely packed during transport.

Natural stirring

Thanks to the Atlantic swell and the currents of Saint Cava, our oysters are naturally “trained”: evolving in a live environment resulting in a firm texture and oceanic taste.

Grade

The number indicates the size of the oyster: the smaller the number, the bigger the oyster. Example: a n°1 oyster is very fleshy, a n°3 is balanced, and a n°5 is finer. To each his own.

Milkiness

A whitish liquid that oysters contain during the summer season. Because we chose to farm triploids, our oysters stay full and non milky, even in the summer.

Aber Wrac’h

The estuary bordering our farm. Rich in nutrients, oxygen and currents, it constantly feeds our farming zone. A natural haven for oysters full of character.

Tagging

Every hamper has a regulatory tag showing all the mandatory information: origin, grade, packaging date, batch number. This is your traceability guarantee.

Oyster farmer

This is our trade. It is a work of observation, precision and patience, in rhythm with the tides. From the sea to the plate, we look over every step.

Short supply chain

We deliver twice a week to our fishmongers and restaurateurs directly from our shipping site in Lilia. A direct supply, with no intermediaries.

Laid out flat, tightly packed, freshly stored

The right way to keep them: laid out flat, tightly packed, covered by a kitchen towel. If refrigerated (fridge or cold room), they will keep for several days.
