The quality of Legris oysters are a direct result of Lilia’s exceptional marine environment and the know-how with which they are grown during the 3 to 5 years it takes for them to reach the size at which they can be sold and savoured.

Since 1986, Maison Legris has honed its know-how on a coast marked by swells, winds and tides.

Created by Emmanuel Legris, a scientist with a passion for the ocean and a graduate in oceanographic biology, the company first started with the aim to cultivate another shellfish: the clam. From the beginning, the farming project was put to the test by the forces of nature as an epidemic impacted all European clam farms. Rather than giving up however, Emmanuel Legris adapted and converted to farmin Pacific oysters and mussels, as well as the European flat oyster. After a while, farming cupped pacific oysters became the main activity and flourished thanks to a unique know-how and farming site.

These 40 years of experience are regularly hailed by professionals of the trade and of the food industry. Legris oysters hold the record in the Finistère department for the number of gold medals won at the “Concours Général Agricole”, the French national agriculture competition.
