THE LILIA ARCHIPELAGO


It is here in North Finistère, at the mouth of the Aber Wrac’h estuary and in the heart of the Lilia Archipelago that the Legris company decided to establish its oyster beds. They thrive in an exceptional environment, harnessing the mineral rich waters of the river as well as the purity of the ocean washing over them at every tide.

The quality of Legris oysters are a direct result of Lilia’s exceptional marine environment and the know-how with which they are grown during the 3 to 5 years it takes for them to reach the size at which they can be sold and savoured.

Grown exclusively in the Lilia archipelago from seed coming from Vendée or Charente, they stand out for their taste of the sea with hints of chestnut, their fleshiness, their regular and concave shape and their solidity and water tightness which allows for a better conservation in their hampers.

THE MAKING OF AN IDENTITY

Since 1986, Maison Legris has honed its know-how on a coast marked by swells, winds and tides.

Created by Emmanuel Legris, a scientist with a passion for the ocean and a graduate in oceanographic biology, the company first started with the aim to cultivate another shellfish: the clam. From the beginning, the farming project was put to the test by the forces of nature as an epidemic impacted all European clam farms. Rather than giving up however, Emmanuel Legris adapted and converted to farmin Pacific oysters and mussels, as well as the European flat oyster. After a while, farming cupped pacific oysters became the main activity and flourished thanks to a unique know-how and farming site.

These 40 years of experience are regularly hailed by professionals of the trade and of the food industry. Legris oysters hold the record in the Finistère department for the number of gold medals won at the “Concours Général Agricole”, the French national agriculture competition.

production

Production team leader

You will be the go-to person on the field for the oyster production team. You will organize the working schedules according to the tides, allocate tasks and organize the work on one of the Maison LEGRIS production sites (seed and half-grown on one side, market size on the other).

You will manage the seasonal workers, monitor the quality of the work on the oyster beds and at the warehouse, and work hand in hand with the management and shipping team. You must show leadership and keep a global vision all the whilst remaining firmly ground to our local oyster beds. At Maison Legris, professionalism and teamwork go hand in hand.

Oyster farm hand

You will look after the oysters as they grow. You will work on the Lilia archipelago, alternating between the sea and the warehouse, according to the rhythm of the tides. You will work in the oyster beds, manipulate oyster bags, participate in the sorting and grading of oysters and the maintenance of equipment.

The oyster farm hand knows the marine environment, respects the specific work techniques and fits into a tight knit team that share the taste of a job well done.

Seasonal oyster farm hand

You will join the team for the summer or the winter season, or for a few months as a student job. You will participate in the shaking of the oyster bags, maintenance of the oyster beds and occasional tasks at the warehouse.

You will discover a demanding but fascinating job by the ocean. At Legris, seasonal workers are trained and form part of the team just like our full time members and can evolve towards a more permanent position as farm hand.

SHIPPING

Shipping team leader

You will coordinate orders and supervise the general organisation of the shipping department. You will work hand in hand with the production team to manage the different batches coming out of the purification tanks, as well as the logistics of shipping. You will manage a team, prioritise and anticipate unexpected events. This is a key role to guarantee the Legris quality all the way to the hamper.

Shipping/packing hand

You will join the team to prepare hampers for shipping. You will sort, pack, tag and organise the working space, assuring a constant quality. It is often an entry-level job with us, accessible to students or seasonal workers, but it can open doors to evolve towards something else in the future. Working in our shipping department means learning about our produce and all the attention it requires.

Delivery driver

You will deliver our produce to our customers all around Finistère. You will often be in direct contact with our fishmongers, restaurant owners and partners. You will get to know our product, represent the company and also help with packaging at the warehouse. The position can also be extended to a commercial status.

Local and international commercial assistant

You will be the link between the shipping team and our customers, may they be local restaurant owners or international distributors. You will alternate between preparing hampers, keeping in touch with the local deliveries, the transport companies and our direct customers.

At Maison Legris, every commercial assistant must stay in touch with the product by participating in its packaging to keep up with the rhythm, the quality requirements and the team spirit.

On the export side, you will be able to adapt to more complex logistical issues and represent Maison Legris internationally during events and exhibitions. Locally, you will need to stay close to the field and our loyal customers whom you will often meet in person.

In both cases this is a varied job, where precision, people skills and curiosity are essential.

THE OYSTER BAR

Floor manager

You will lead the floor staff, organise the services, manage bookings and takeaway sales, while assuring fluidity between the kitchen and the shipping team. As a full time presence, you will make sure the oyster bar functions smoothly all year round. You will get to know the product, anticipate needs and train seasonal staff to offer our customers an experience worthy of Maison Legris. You will embody our spirit: efficiency, warmth and conviviality.

Chef

You will create a limited, local, seasonal menu and work with our partner producers like our abalone producing neighbours in Lilia. You will manage the organisation of the kitchen: stocks, hygiene, presentation, frequentation spikes. You will manage a small team, participate in the meal services, train new team members and transmit the culinary identity of Maison Legris. The kitchen has a direct view of the sea, in a lively spot all year, marked by the holiday periods and summer season.

Sous chef / kitchen hand

You will be the daily helping hand of the chef. You will prepare, plate, clean and participate in the entirety of the service. You will quickly adapt to the team and improve progressively as the weeks go by. This position is often given to seasonal workers, youths or people changing careers, willing to learn a new, demanding, but accessible trade. Ideally starting before the start of the season, you will help to kickstart the kitchen and set the basis for a smooth service.

Head waiter

You will be the right-hand man/woman of the floor manager. You will know all the inner workings of the meal services and specificities of Maison Legris inside out. You will ensure everything flows smoothly between the floor and the kitchen, sometimes manage a service by yourself and bring support to the team members with calmness and method. You will also train new members, make sure services go smoothly and actively contribute to keeping our standards in a pleasant atmosphere.

This position is usually given to an experienced seasonal worker who already knows the company and wishes to take on extra responsibility in a tight knit team.

Waiter/waitress

You will participate in all aspects of the bar: welcoming guests, service, takeaway sales, maintenance. You will join a team of over 20 people in high season and can also occasionally work weekends or during school holidays. It is a very formative position, in an exceptional environment and a welcoming team. Ideal for a summer or full-time job according to the candidate profile.

You will insure the cleanliness of the kitchen, clean utensils and working spaces, and participate in simple preparations. In permanent contact with the kitchen team, you will guarantee a smooth rhythm during service. This position is often offered as a student or seasonal job, to motivated youths who would like to try out kitchen work while working in a team.
